We double layer as the rice paper is quite thin and easy to tear when rolling. Adding the double layer makes it less likely to tear and easier to wrap.

HOW TO MAKE RICE PAPER ROLLS
STEP ONE
Prepare your protein – peal prawns, marinate tofu, shred chicken.
STEP TWO
Dip rice paper into warm water and pull out before it becomes too soft as it will continue to soften.
STEP THREE
Lay rice paper flat on your work bench and place lettuce and vermicelli noodles in the bottom section, followed by the firmer ingredients in the middle section.
STEP FOUR
Fold in both sides into the middle to close off the ends.
STEP FIVE
Fold up from the bottom and roll upwards stretching slightly to keep it nice and firm.
STEP SIX
The rice paper will be sticky so it will seal itself. We roll it in this way so that the main ingredients are shown which is also visually appealing.
TERIYAKI CHICKEN RICE PAPER ROLLS
INGREDIENTS
- TERIYAKI CHICKEN – you can find my Chicken Teriyaki recipe here.
- CARROT – can be replaced with any harder ingredients, like capsicum etc.
- CUCUMBER – cut into fingers, this creates a nice crunch.
- VERMICELLI NOODLES – can be replaced with zucchini noodles.
- LETTUCE – makes it easier for rolling the loose ingredients, such as the vermicelli noodles.
TOFU RICE PAPER ROLLS
INGREDIENTS
- MARINATED TOFU – I marinated tofu in soy sauce, sesame oil and brown sugar for at least 15 minutes.
- AVOCADO – creates a creamy texture.
- ZUCCHINI NOODLES – or grated zucchini works too.
- RED CABBAGE – shredded or grated to add colour.
- VERMICELLI NOODLES – can be replaced with zucchini noodles.
- LETTUCE – I use butter or oak lettuce as it is softer than other lettuces and won’t tare the rice paper.

Instructions
For all rice paper roll recipes below fill a bowl of warm water and dip the rice paper sheet into the bowl. Pull out before it becomes too soft as it will continue to soften.
Place on work bench and do the same again with another rice paper sheet and place on top of the previous one so they are double layered.

Notes
If I am sending these rice paper rolls in a lunchbox I will not cut them.
If you are prepping in advance I would suggest placing cut vegetables into a air tight container to store in the fridge.
All vegetables can be changed or swapped around to suit you and your kids tastes.
