Instructions

For all rice paper roll recipes below fill a bowl of warm water and dip the rice paper sheet into the bowl. Pull out before it becomes too soft as it will continue to soften.

Place on work bench and do the same again with another rice paper sheet and place on top of the previous one so they are double layered.

TERIYAKI CHICKEN

Top rice paper sheets with lettuce and vermicelli noodles in the bottom section. Next add the firmer ingredients: cucumber, carrot and teriyaki chicken to the middle. Fold both sides of the rice paper into the middle (to close off the ends), then starting at the bottom roll upwards stretching the rice paper slightly to keep it nice and firm. The rice paper will be sticky so it will seal itself.

TOFU

Marinate the tofu in soy sauce, sesame oil and brown sugar for 15 minutes. Top rice paper sheets with lettuce and vermicelli noodles in the bottom section. Next add the avocado, zucchini noodles, red cabbage and marinated tofu to the middle. Fold both sides of the rice paper into the middle (to close off the ends), then starting at the bottom roll upwards stretching the rice paper slightly to keep it nice and firm. The rice paper will be sticky so it will seal itself.

PRAWN

Top rice paper sheets with lettuce and vermicelli noodles in the bottom section. Next add the avocado, cucumber and prawns to the middle. Fold both sides of the rice paper into the middle (to close off the ends), then starting at the bottom roll upwards stretching the rice paper slightly to keep it nice and firm. The rice paper will be sticky so it will seal itself.

VEGETABLE

Top rice paper sheets with lettuce and vermicelli noodles in the bottom section. Next add the firmer ingredients: carrot, red cabbage, cucumber and zucchini noodles to the middle. Fold both sides of the rice paper into the middle (to close off the ends), then starting at the bottom roll upwards stretching the rice paper slightly to keep it nice and firm. The rice paper will be sticky so it will seal itself.

LEFTOVER CHICKEN

Top rice paper sheets with lettuce and vermicelli noodles in the bottom section. Next add avocado, cucumber, mayo and leftover chicken to the middle. Fold both sides of the rice paper into the middle (to close off the ends), then starting at the bottom roll upwards stretching the rice paper slightly to keep it nice and firm. The rice paper will be sticky so it will seal itself.

Notes

If I am sending these rice paper rolls in a lunchbox I will not cut them.

If you are prepping in advance I would suggest placing cut vegetables into a air tight container to store in the fridge.

All vegetables can be changed or swapped around to suit you and your kids tastes.
