RICE PAPER ROLLS LUNCHBOX
These vibrant rice paper rolls will be a hit with kids of all ages. Super easy to make with some prep that can be gone the night before, not only will they save you time but the kids can get involved in the process.
From crisp veggies like carrots, cucumbers, and red cabbage to savoury proteins like chicken, prawns, or tofu, the filling possibilities are endless. Plus, with a variety of dipping sauces to choose from, every bite is a new adventure for your taste buds which keeps the kids interested.
GLUTEN FREE LUNCHBOX
This is a great gluten free lunchbox recipe. Sometimes it can be hard to find new and exciting gluten free options for kids and this has to be one of my favourites because not only are you getting lots of vegetables into them but it’s also visually appealing with all the colours, super delicious and easy to make.
These rice paper rolls are also a great recipe to have for dinner the night before, so in the morning with all the prep done all you have to do is roll them for the kids lunchboxes.
Some other ideas for gluten free lunchboxes could be – any fresh cut up vegetables and fruits, gluten free crackers and cheese, frittata bites, boiled eggs, rice with protein, nachos and sushi.

RICE PAPER ROLL LUNCHBOX INGREDIENTS
- POPCORN – this is the treat food for this lunchbox. I made homemade popcorn, I find the easiest way is to make is to use a popcorn machine from Amazon so you don’t have to add any extra oil. If you don’t have a popcorn machine you can use the stovetop or but any pre-made popcorn. For the healthiest option look for low salt.
- CUCUMBER – crunchy and fresh.
- GRAPES – I have used green grapes but you can use any grapes and cut if needed.
- RASPBERRIES – adds colour to the lunchbox, also packed with fiber, vitamins, minerals and antioxidants.
- RICE PAPER ROLLS – find my recipe here. Alternatively you can use any flavour rice paper rolls that your children like or to use up any left overs.
- DIPPING SAUCE – this peanut butter dipping sauce is super delicious and honestly the key to getting my kids to eat the rice paper rolls. You can find my recipe here.
HOW TO MAKE RICE PAPER ROLL LUNCHBOX
I put the popcorn kernels into the popcorn machine and followed the machines instructions for use.
Next I cut the cucumber into finger size slices, easy for the kids to pick up and eat.
I added some grapes – enough to fill the space in the lunchbox as well as some raspberries.

The dipping sauce is in its own separate container, that has a lid – which came with the lunchbox. You can use any different container you have at home so the sauce doesn’t spill everywhere.
