Sweet Potato Crisps with the flavours of salt & vinegar made using apple cider vinegar.  These are crispy, healthy and a delicious snack for little sweet potato lovers.

Sweet Potato Crisps

Sweet potato oven fries are a weekly staple in our house, it was one of Sam’s first foods and has been a favourite ever since.  He does love his carbs and has a sweet tooth, so I guess no surprises there.  The good thing is, if you look up the list of health benefits of sweet potatoes, the list goes on.  Here are some I have found;

  • contain antioxidants like beta carotene
  • vitamins C, D & E
  • manganese and iron
  • good for constipation
  • can bind to and help remove heavy metals from the body
  • and is suggested can help prevent some cancers

I find they are easy to cook and readily available so easy to have on hand, they also last a few weeks stored in a ventilated container in the pantry.

Sweet Potato Crisps

Description

Sweet Potato Crisps with the flavours of salt & vinegar made using apple cider vinegar.


Ingredients

Scale
  • 1 medium sweet potato
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon extra virgin olive oil
  • 2 teaspoons salt

Instructions

Preheat oven to 180°C.

Mix together the oil, vinegar and 1 teaspoon of salt.

Peel, trim and thinly slice, with a mandolin, the sweet potato.  Place sweet potato into bowl and coat each piece in the vinegar mixture.

Shake off any excess liquid and lay in a single layer on a tray lined with baking paper.  (you will need 2 or 3 trays)

Bake for 20 mins, then turn oven down to 100°C for a further 20 mins or until crispy.  Keep an eye on them as some will cook quicker than others.

Serve sprinkled with remaining salt. (optional)

Notes

These do go soft by the next day, but can be placed in a hot oven for 5 minutes to crisp up again.
