Simple Pomegranate & Feta Salad
‘You don’t make friends with salad’…… luckily I got this one from a friend who has been around forever. I love knowing someone for a really long time, a good friendship is like aging a good chardonnay…. it gets better with age. I won’t say how much age as that may contradict with how old I pretend to be. I cherish these forever friends…… and you know if they have been around this long, they certainly aren’t going anywhere now!

A Simple Pomegranate & Feta Salad made with just pomegranate, rocket, feta and balsamic. Light and sweet with crunchy pomegranate seeds.
Ingredients
- 1 pomegranate
- 120g rocket leaves
- 180g good quality Persian feta
- drizzle balsamic vinegar
Instructions
Remove the seeds from the pomegranate and combine with the rocket and crumbled feta. Drizzle with a little oil from the feta and balsamic vinegar. Season well with salt and pepper and serve!
Notes
Tips on getting the seeds out of a pomegranate; roll the pomegranate on the bench to loosen the seeds. Then score around the middle and tear in half. Hold over a bowl and tap on the back with a wooden spoon OR score into quarters from top to bottom, place in a bowl of water and pull apart the quarters to release the seeds, strain and remove the pith.
