PIZZA SCROLLS

These pizza scrolls are perfect when you want something fun to put into your kid’s lunchbox. They are also a great way to get kids in the kitchen and helping with cooking dinner. These can be eaten warm on the day or keep in fridge and eat cold for up to 3 days.

YOGHURT FLATBREAD

These easy pizza scrolls are made using my Yoghurt Flatbread recipe as the base. You can find two different recipes below.

PIZZA SCROLLS INGREDIENTS

  • YOGHURT – I used natural yoghurt in this recipe but you can use greek yoghurt as an alternative.
  • FLOUR – self raising flour works best.
  • PIZZA SAUCE – I used my homemade Tomato Pasta Sauce to add some extra veggies but you can use any pizza sauce of your liking.
  • CHEESE – I used mozzarella as I think it melts the best but you can use cheddar if you prefer.
  • HAM – any type of sliced ham you prefer.

FREQUENTLY ASKED QUESTIONS FOR PIZZA SCROLLS

Can I make these pizza scrolls vegetarian?

Yes of course you can. Simply leave out the ham or you can add some thinly sliced tomatoes, chopped spinach or grated carrot.

How do I store Pizza Scolls?

Once cooked and cooled, put them in an air tight container and place in the fridge for up to 3 days.

Can I freeze these pizza scrolls?

Yes you sure can. Once cooked and cooled, place in an air tight container or freezer bag and store in the freezer for up to 3 months. When ready to eat I defrost mine in the fridge the night before.

HOW TO MAKE PIZZA SCROLLS

STEP 1
Combine yoghurt and flour and knead gently until it becomes smooth.

STEP 2
Spread out evenly into a rectangle.

STEP 3
Top with sauce, grated cheese and ham.

STEP 4
Roll tightly and cut into pinwheels.

STEP 5
Flip over so they lay flat and spread out on a lined baking tray..

STEP 6
Bake at 200C for 15 minutes.

  • Total Time: 20 minutes
  • Yield: 14–16 scrolls 1x

Ingredients

Scale
  • 1 cup natural yoghurt
  • 1 cup self raising flour, plus extra for dusting
  • tomato pizza sauce
  • grated mozzarella cheese
  • sliced ham

Instructions

Pre heat oven to 200C.

In a bowl combine the yoghurt and flour until mixed together.  Tip out onto a dusted bench and knead for a few minutes until the dough comes together.  Then spread out evenly into a rectangle.

Top with a thin spread of pizza sauce, cheese and ham slices then roll tightly into a roll.  Slice into pinwheels and lay flat on a lined baking tray.

Bake in the oven for 15 minutes.

Notes

These can be eaten cold and kept in the fridge for 3 days.
