Super Fast Mexican Chicken

A super fast Mexican Chicken dinner, thats loaded with flavour and can all be cooked in one pan. Top with all your favourite condiments and you can have dinner on the table in 20 minutes!

Add in your favourite lettuce or greens and turn this into a Mexican Chicken Salad.

Why this Super Fast Mexican Chicken is a great Family Dinner

  • Minimal Ingredients – just chicken, a few spices, capsicum, red onion and your favourite condiments.
  • Easy – can all be prepped, cooked and served in around 20 minutes.
  • Full of Flavour – this chicken is loaded with flavour, yet mild enough for the whole family.
  • Perfect for Leftovers – this is great in a wrapped or toasted sandwich or bagel the next day.
  • Homemade Seasoning – I like to use my own seasoning for this recipe, but you could use store bought Mexican Seasoning packets if you prefer.
  • Customizable – you could change the vegetables with whatever your family prefers, such as broccoli.

 

Mexican Chicken Ingredients

Chicken Thigh – I prefer to use skinless chicken thigh, but you can swap for chicken breast.
Red Capsicum – Use whichever colours you like, red, orange and yellow tend to be sweeter than green capsicums.
Onion – I prefer red in this recipe, but you can use brown or white.
Spices – you could add chilli or use a Mexican packet mix if you like.
Olive Oil – used to cook the chicken and veggies, you can replace with coconut oil or any oil of choice.
Avocado, Coriander & Sour Cream – use whatever condiments you like.
Lettuce or Greens – add in your favourite lettuce or greens to turn this into a Mexica Chicken Salad.

Mexican Marinade for Chicken

This has to be one of the most simple recipes for a Mexican Marinade for Chicken, it’s just ground cumin, smoked paprika and turmeric. If you wanted to boost the flavour even further, you could add in garlic salt and onion powder. Perfect added to grilled Mexican Chicken.

Super Fast Mexican Chicken

Description

A super fast Mexican Chicken dinner, thats loaded with flavour and can all be cooked in one pan. Top with all your favourite condiments and you can have dinner on the table in 20 minutes!


Ingredients

Scale
  • 2 tablespoons extra virgin olive oil
  • 500g chicken thigh, skinless and cut into bite sized pieces
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon turmeric
  • 1 red capsicum, sliced
  • 1 red onion, sliced
  • 1 avocado, to serve
  • sour cream to serve
  • tortillas, to serve
  • fresh coriander, to serve

Instructions

Heat the oil in a large frypan over medium high heat.  Cook the chicken, stirring, for 5-10 minutes or until all pieces are cooked through.  As the chicken is cooking, add the cumin, paprika and turmeric.  Add in the capsicum and onion and cook until softened.

Heat tortillas as per packet instructions and serve chicken topped with avocado, sour cream and fresh coriander.
