LUNCHBOX NACHOS
My idea for Lunchbox Nachos came from leftover bolognese sauce we had used for dinner the night before. Find my Spaghetti Bolognese recipe here.
You can use any leftover sauce you have. For example, my Tomato Red Pepper Pasta Sauce would work perfectly in this recipe as well, especially as it is made from veggies. In my opinion, the more vegetables the better for any kid’s meals.
In this particular lunchbox, I have included homemade waffles as well as some different fruits and vegetables cut into different shapes to keep the kids interested.
LUNCHBOX NACHOS INGREDIENTS
- CORN CHIPS – Any corn chips will work.
- CHEESE – I used the Mexican mix from Coles but you can use any cheese you prefer.
- SAUCE – You can use any sauce you have at home. Some examples are leftover bolognese, passta sauce, leftover pasta sauce, leftover taco mince, any salsa,
- EXTRAS – There are so many extras you can add to create a healthy balanced meal for the kids. Some ingredients you can use are.. black beans, lentils, kidney beans, capsicum, tomatoes etc.

How do you keep nachos from getting soggy?
If you want to add extra toppings, I would suggest serving these on the side. This will help prevent the Lunchbox Nachos from going soggy. I would also not overload the corn chips with bolognese as this is another way the nachos can go soggy.
Do I put cheese on nachos first or last?
I personally put the cheese on last so it melts over the bolognese and goes nice and golden. Although if you wanted to put the cheese on first or double later the cheese, this is completely fine.
What is the best cheese for nachos?
Cheddar cheese or mozzarella are known best for their melting ability. Another type you could use would be a Mexican blend from your local supermarket.
What is the correct way to layer nachos?
I would say don’t overcrowd your nachos. The most common layering would be corn chips, meats and vegetables and cheese on top.

STEP ONE
Preheat oven to 180°C. Place corn chips in an over-proof dish.
STEP TWO
Top corn chips with bolognese or sauce of your choice.
STEP THREE
Sprinkle with cheese.
STEP FOUR
Bake in the oven for 10 min or until the cheese is melted.
