Having fun with Homemade Pasta in pink, yellow and green all made with natural food colouring! Plus sneaking in a few extra veggies / nutrients using beetroot powder, immune boosting turmeric and nutrient loaded spirulina.

STEP 1
Tip flour onto bench & make a well in the centre.

STEP 2
Add eggs and olive oil.

STEP 3
Add the beetroot powder, turmeric or spirulina, depending on which colour you are making.

STEP 4
Knead until smooth and elastic.

STEP 5
Roll out using a rolling pin or pasta machine.

STEP 6
Cut into your favourite pasta shape.

Homemade Pasta

Homemade pasta is a great recipe to make during these crazy lockdown times, fun for the kids to get involved and I am pretty sure most of us stocked up on eggs and flour. I used beetroot powder, turmeric powder and spirulina powder to make the colours naturally. All of these you can fairly easily order online. (I get mine from www.southwestprovisions.com.au)

If you make all three colours, you will end up with a lot of pasta, I just par cooked mine and froze some and the rest will get used for the next two dinners. The powders don’t really add any flavour to the pasta, just colour, so really great for fussy eaters. My kids had theirs with just a little butter and grated cheese and some steamed veggies. Such a simple yet fun dinner.

As long as you are prepared for the flour mess on the floor, this is really great for getting the kids in the kitchen. (maybe even teaching them how to sweep floors afterwards)

Homemade Pasta


  • Total Time: 23 minutes
  • Yield: serves 12–18 1x

Ingredients

Scale
  • 900g plain flour
  • 9 eggs
  • 3 tablespoon extra virgin olive oil
  • 1 teaspoon beetroot powder
  • 1 teaspoon turmeric powder
  • ½ teaspoon spirulina powder

Instructions

THERMOMIX METHOD

Place the 300g flour, 3 eggs, 1 tablespoon of oil and the beetroot powder into the TM mixing bowl and knead 2 min / lid locked / knead.  Remove, wrap in plastic wrap and allow to rest for about 15 minutes.  Repeat this with the turmeric powder and then the spirulina powder, if you are making all three colours.

Roll out with a rolling pin or pasta machine and slice into fettuccine strips.

Bring a pot of salted water to boil, add the pasta and cook for 3 minutes and serve with your favourite sauce and cheese!

NON THERMOMIX METHOD

Place the 300g flour onto the bench and make a well in the centre, add 3 eggs, 1 tablespoon of oil and the beetroot powder and use a fork to mix together.  Knead the dough until it is smooth and elastic, wrap in plastic wrap and allow to rest for about 15 minutes.  Repeat this with the turmeric powder and then the spirulina powder, if you are making all three colours.

Notes

Try and get hold of the best quality flour and eggs you can.
