Homemade Gummies with Lime and Coconut

Gelatin is a great source of protein and can reduce inflammation in the gut, this is great for those suffering gut health issues and also a great boost for those who aren’t.  I source my gelatin here Nourished Life An Australian, 100% natural product.  These are a great, healthy treat for lunchboxes and are both nut and dairy free.  I also love making these for my kid’s birthday parties.

Lime + Coconut Gummies


  • Total Time: 6 minutes

Description


Ingredients

Scale
  • 2 cups coconut milk
  • 1 lime, juiced
  • 1 tbsp maple syrup
  • 4 tbsp gelatin

Instructions

Pour half the coconut milk and all the lime juice into a bowl and sprinkle over the gelatin.  

Heat the remaining milk in a saucepan and turn off just before it boils.  

Add maple syrup to the bowl, then pour over heated milk.  

Whisk together until combined well.  

Pour into moulds and refrigerate to set, (about 2 hours).

Notes

I used ‘I Quit Sugar’ Gelatin, you can get it online from Nourished Life here.
