Things I have learnt since kids;
- time – things will happen when they happen
- patience – they have a speed much, much slower than a busy adult
- health – not just the we had a salad today so we are doing well. Its a constant thought sitting at the back of your mind, all the time…….. have they had their 5 serves of vegies today? how much fruit have they had? have they had enough calcium? when did they last have something sweet, is it too much to give them this cookie they are asking for? Then they get sick and the thoughts are; how can I fill them full of nutrients to fight off this snotty nose? how can I boost their immune system so it doesn’t happen again? how is their gut health? what is this rash on his cheeks from? and on and on and on….. and then the biggest one of all…. how am I going to get them to eat all this food that is so good for them? This was the beginning of Kids Eat by Shanai, sharing recipes that hopefully make it a little easier to feed our kids.
These orange and mango gummies literally took me 5 mins to make this morning and were set by the time I had cleaned up after breakfast! My kids absolutely loved them, they will be great for my daughters birthday party which is coming up soon. Gelatin is great for gut health and is a source of protein. orange & mango gummies
1 cup orange & mango juice
2 tbsp gelatin
½ tbsp honey
Pour half the juice into a bowl and sprinkle over the gelatin. Heat the remaining juice in a saucepan and turn off just as it starts to boil. Add honey to bowl, then pour over heated juice. Whisk together to combine well. Pour into moulds and refrigerate to set, about 2 hours).
