Homemade Ginger Syrup made simply with fresh ginger, sugar and water, or for a healthier version use ginger and honey.  Perfect added to soda water, as a glaze over roast chicken, in a salad dressing or poured over ice cream.

Homemade Ginger Syrup

There is a bucketload of sugar in this recipe, so I am not suggesting it is a healthy food for you or your kids, but it is a really great replacement to store bought soft drinks.  So if you are entertaining or for Christmas, this is a great option, just add sparking water.  I made this up as the kids got a Soda Stream for Christmas last year and rather than using the syrups that come with it I thought I would make some of my own.

Ginger is loaded with antioxidants so can help with inflammation in the body, but this drink is still a treat saved for special occasions. For a healthier version you can make it with just ginger and honey.  Place the ginger into a saucepan and add enough honey to cover the ginger, gently simmer 10-15 minutes until the ginger gets soft, then pour into glass jar and store in the fridge for up to a month.  You can leave the pieces of ginger in the syrup or strain it out.  This is also great mixed with lemon juice and thyme and brushed over chicken before roasting.

Homemade Ginger Syrup

Description

Ginger Syrup made simply with fresh ginger, sugar and water.


Ingredients

Scale

2cm piece ginger, peeled & sliced

2 cups sugar

2 cups water


Instructions

Place sugar and water into a saucepan over medium-high heat.  Stir to dissolve the sugar then add the ginger and bring to a gentle simmer.  Leave to simmer for 30 minutes.

Leave in saucepan until completely cool, this allows the ginger to infuse further.

Strain out ginger pieces and store in a sealed container in the fridge for up to a month.

The ginger pieces can be eaten, they taste like candied ginger.

Notes

Mix syrup with sparkling or still water to drink, you may only need 1-2 tablespoons of syrup per glass of water, just adjust to taste.

    I love how you photographed this syrup, so beautiful! I’ve made ginger syrup before for a gin cocktail but never thought to use it in any other capacity. Such a great idea to use it just with sparkling water. Thank you for sharing and Happy New Year!
