Hoisin Peanut Chicken Lettuce Wraps
These are seriously the easiest and tastiest dinner I have made in a long time! I think these will be my new favourite. I just put everything in the middle of the tables and let the kids make their own. Admittedly they pretty much just ate the noodles and chicken (and handfuls of peanuts) but by the end they were both having a go of making ‘Mummy wraps’. All in the name of making dinner fun.
You can use whatever lettuce you can get your hands on, I chose this Butterhead Lettuce because it is nice and soft and easy to wrap around the chicken. It’s also quite sweet and not too bitter. Baby Cos Lettuce would be my next choice, my kids love Baby Cos as it’s nice and crunchy. You could make little chicken boats with the Cos.
I like my lettuce wraps quite saucy and topped with crunchy peanuts (I also added fresh chilli to mine) so I made plenty of thick, peanutty sauce. You can add extra water to thin it out if you prefer.
These are perfect made with leftovers from my super popular One Tray Hoisin Peanut Chicken + Rice. You could even replace the noodles with leftover rice if you wanted.
Hoisin Peanut Chicken Lettuce Wraps

Description
Hoisin Peanut Chicken Lettuce Wraps made with leftover roast chicken, lettuce, rice noodles and hoisin sauce.
Ingredients
HOISIN SAUCE:
- 3/4 cup peanuts
- 3/4 cup Hoisin sauce
- 21/4 tablespoons rice wine vinegar
- 1/4 cup warm water
WRAPS:
- 1 – 2 heads of lettuce (I used Butterhead)
- 2 cups cooked chicken, shredded
- 1 packet rice noodles
- crushed peanuts to serve
- coriander to serve
Instructions
In a small food processor, blitz together all the sauce ingredients and place into a bowl.
Cook rice noodles as per packet instructions.
Assemble each lettuce wrap with a large lettuce leaf, noodles, chicken, spoonful of sauce and garnish with crushed peanuts and roughly chopped coriander.
Notes
You could leave out the rice noodles or replace them with cooked rice.
