This Easy Pancake Recipe made with Vanilla Yoghurt is a really easy pancake recipe for kids. No added sugar, added benefit of probiotics from the yoghurt and nutrients in the spelt flour a flaxseed. Easy to make and delicious homemade pancakes for breakfast!
STEP 1
Combine eggs and yoghurt in a large bowl.
STEP 2
Sift in the dry ingredients.
STEP 3
Whisk until just combined.
STEP 4
Cook until bubbles form on top.
Easy Pancake Recipe made with Vanilla Yoghurt
These healthy pancakes are so easy to make and with minimal ingredients. I often see an easy pancake recipe but then realise it has sugar and melted butter added to it, I really think pancakes are best kept simple, especially if they end up topped with butter and maple syrup once they are cooked.
This simple pancake recipe is great served straight away for breakfast, or packed in the kid’s school lunchboxes. For breakfast I like to top with more yoghurt and sliced bananas or drizzled in maple syrup. This is a really easy pancake recipe for kids.
To reduce the sugar content you could make these with Greek yoghurt instead of vanilla yoghurt, which will most likely be sweetened.
If you can get your hands on a crepe pan, you will have perfectly turned out pancakes every time. I currently am using an electric. crepe pan, but looking to invest in a Scanpan one next. (similar to this one.)

How to make Vanilla Yoghurt Pancakes;

Ingredients
- 2 eggs
- 1 cup Greek yoghurt
- 1 cup spelt wholemeal plain flour
- 1 tablespoon flaxseed meal
- 1 teaspoon baking powder
- pinch of salt
Instructions
Ina large bowl combine the eggs and yoghurt. Sift in the flour, flaxseed, baking powder and salt and stir until combined.
Heat your pan on medium-high until hot, then reduce to medium. Grease with a little oil or butter first, then spoon batter into even sizes and cook until bubbles form on the surface, about 2 minutes. Flip over and cook a further 1-2 minutes on the other side.
Serve top with more yoghurt and maple syrup or any of your favourite toppings!
