It’s Easter! Forget the chocolate bunnies, make these Easter Bunny Pancakes instead! So much fun and super easy, if I can do it so can you!
Pancakes are such a staple in our house, we have them more often than toast or cereal. I much prefer feeding my kids things made from scratch. While I was searching around for great Easter recipes I spotted some bunny pancakes by Jenni Price and thought I would give them a go. They were so easy! I grabbed some sauce bottles from Kmart for just $1.75 each.

EASTER BUNNY PANCAKES
These are made using the simplest pancake recipe of just 1 egg, 1 cup plain flour and 1 cup of milk. Coloured using chocolate powder and pink colouring. Pink food colouring works, for a healthier option try using beetroot powder.
These are really easy, the trick is to allow the pancake mixture to rest in the fridge for at least an hour to thicken and then do the outline first over really low heat and allow to cook slightly before filling the centre in, this way the outline holds its shape.

INGREDIENTS
- EGGS – I try to use pasture raised eggs but any eggs you have will work.
- PLAIN FLOUR – I find plan flour works best in this recipe.
- MILK – I used cow’s milk but you can use any type of milk of your choice.
- BEETROOT POWDER – a healthier way to make the pink colour for the pancakes. Pink food colouring would be an alternative.
- RAW CACAO POWDER – for the chocolate in the pancakes. An alternative would be cocoa powder which is slightly different.
