STEP 1
Spiralise 2 zucchini or peel with a vegetable peeler into ribbons.
STEP 2
Combine your pesto with 1 avocado.
STEP 3
In a frypan over low-medium heat, add in the chicken and zucchini and toss until warmed through.
STEP 4
Stir through the avocado pesto and serve topped with parsley.

This recipe is the easiest when you have leftover pesto and leftover roast chicken in the fridge. You can throw together a really healthy and really tasty dinner. This is a great gluten free and dairy free dinner option that is ready in minutes.

Ingredients
- 2 zucchini
- 2 cups leftover roast chicken
- 1 avocado
- ½ cup pesto (see my recipe here)
- fresh parsley to serve
Instructions
Use a spiraliser or vegetable peeler to create ribbons out of the two zucchinis.
Mash the avocado and combine with the pesto and set aside.
In a large frypan over low-medium heat, add the zucchini and chicken and toss until warmed through. Stir through the avocado pesto mixture and serve topped with fresh parsley.
Notes
Depending on how well seasoned your pesto is, you may want to season this dish with salt & pepper.
Don’t cook the zucchini noodles for too long or they will go too soft.

WHERE TO BUY A SPIRALISER?
I find this one really easy to use and clean, it also seems really safe as your fingers aren’t near the blades. You push the end of the zucchini into the spiky end, which then holds it and pushes it through the blades as you turn the handle.
