Chicken + Zucchini Noodles with Creamy Avocado Pesto

Description

This chicken & Zucchini Noodles with Creamy Avocado Pesto could be one of the easiest and healthiest dinners you ever make.  And it’s made using leftover roast chicken!


Ingredients

Scale
  • 2 zucchini
  • 2 cups leftover roast chicken
  • 1 avocado
  • ½ cup pesto  (see my recipe here)
  • fresh parsley to serve

Instructions

Use a spiraliser or vegetable peeler to create ribbons out of the two zucchinis.

Mash the avocado and combine with the pesto and set aside.

In a large frypan over low-medium heat, add the zucchini and chicken and toss until warmed through.  Stir through the avocado pesto mixture and serve topped with fresh parsley.

Notes

Depending on how well seasoned your pesto is, you may want to season this dish with salt & pepper.

Don’t cook the zucchini noodles for too long or they will go too soft.
