Chicken + Avocado Pizza
We just spent 5 weeks driving a 7m motor home round New Zealand…………. and it was amazing! The perfect share of kid holiday / adult holiday….. we spent our day chasing playgrounds, sauv blancs and amazing views……… and found plenty of all three! We pretty much covered both islands tip to tip, drove along stunning coastlines and sometimes cliff edges……. tasted awesome foods including plenty of home grown pork and poultry….. I wish we could be as self sufficient as so many are in NZ. The milk was so creamy from the lush grasses the cows are able to feed on. Even though the weather got a bit crazy at times, we really had the time of our life and can’t wait to get back there again!
This is the easiest pizza base recipe I have ever made and use it for everything! Just two ingredients of yoghurt and flour and ready in just a few minutes. This will change Friday night pizza forever! I topped ours with BBQ sauce, leftover roast chicken, avocado cheese mayonnaise and parsley. Try using my recipe for Homemade Mayonnaise.

Description
Chicken and Avocado Pizza, You will be amazed with this pizza base, it’s so light and made easily in just a few minutes!
Ingredients
- 1 cup self raising flour
- plus extra flour for dusting
- 1 cup natural or Greek yoghurt
- BBQ sauce
- leftover cooked chicken
- avocado
- grated cheese
- mayonnaise
- parsley
Instructions
Combine the flour and yoghurt and gently knead until it forms a dough. (should only take a minute or two)
Split into 6 smaller balls and roll out each of these flat. In a dry fry pan over high heat, cook each pizza base, turning as each side starts to brown, then remove from pan. Wipe clean between bases.
Pre heat oven to 200°C.
Top each base with sauce, chicken, cheese and bake in oven until cheese starts to melt and bubble.
Serve topped with avocado, mayonnaise and parsley.
Notes
Leftover bases can be stored in an airtight container for 3 days or frozen.
