Bringing back my childhood memories with these simple, and low sugar, Butterfly Cakes. I used muffins and whipped cream to keep them healthier.
Butterfly Cakes
I think these made an appearance at all the birthday parties in my family, back when cupcake decorating was much simpler. So simple and no decorating skills needed whatsoever, you could even get the kids to make these themselves.
Just choose your favourite muffin or cupcake recipe, I chose muffins as they tend to have less sugar than cupcakes. You could try making them with any of these recipes;
Banana Bread Muffins
Banana, Yoghurt, Raspberry and White Chocolate Muffins
Step 1
Once your muffins have cooled completely, cut a 2cm-deep x 3cm-wide circle from the top of each cupcake.
Step 2
Cut the little tops in half.
Step 3
Fill the hole with whipped cream and top with sprinkles.
Step 4
Poke back in the two halves to look like wings coming out of the cakes.

Ingredients
- 36 pre cooked and cooled mini cupcakes or muffins
- 1 cup pouring cream, whipped
- sprinkles for decorating
Instructions

Notes
You can use whatever cupcake or muffin recipe you like.
Fill with cream when ready to serve, cupcakes can be made the day before.
