I dont realise how much I enjoy the school holidays until they are over and I am spending my days washing school uniforms, making lunch boxes, waking kids up early and racing around doing drop offs and after school sport.
This term I am keeping my dinners super simple so I can spend less time in the kitchen and more time with my kids out in the sunshine.
1. LEFTOVER CHICKEN TERIYAKI STIR FRY NOODLES
Stir Fry using leftover roast chicken, loaded with veggies, noodles and a super easy Teriyaki sauce. Make these Leftover Chicken Teriyaki Stir Fry Noodles using the leftovers from my Oven Baked Chicken Teriyaki and Rice. That makes dinner sorted for two nights in a row!

2. OVEN BAKED CHICKEN TACOS
Chicken Tacos baked in the oven & made with leftover roast chicken. My favourite Chicken Taco Recipe and it’s so easy! You could also make as pulled pork tacos using leftover slow cooked pork. These are ready in less than 30 minutes and as they are baked with the filling and cheese in the oven, it’s a perfect taco recipe for kids. So much less mess!
