Grilled prawn tacos with a crunchy coleslaw and easy 3 ingredient lime dressing. Dinner in less than 30 minutes!
These are a great as a kids’s dinner and also perfect for kid free entertaining. Very limited time in the kitchen and guests can sit around the table making their own tacos. I like to include some jalapenos on the side also.
This just has Summer time written all over it……….
12 soft tortillas
1kg raw prawns
3 avocados, diced
3 limes, cut into wedges for garnish
1 bunch parsley, for garnish
½ red cabbage
½ white cabbage
½ red onion
1 red apple
½ cup mayonaise
½ cup sour cream
1 lime, zest and juice
Whisk together the mayonnaise, sour cream, lime juice and zest for the dressing.
Finely slice the cabbage, onion and apple and combine well with the dressing to make the coleslaw.
Pan fry the prawns in batches in a large fry pan with a little oil over med-high heat. Cook for 1-2 minute each side until cooked through and orange in colour.
Heat tortillas as per packet instructions. Assemble each tortilla with coleslaw, avocado, prawns, parsley and a wedge of lime.
