Vegetarian Wraps

Ingredients

  • 6 flatbreads
  • 6 large lettuce leaves
  • 1 cup cooked sushi rice
  • 1 avocado, smashed
  • 3 carrots, thinly sliced
  • 1 cucumber, thinly sliced
  • 1/4 head red cabbage, thinly sliced
  • 1/2 cup parsley, roughly chopped
  • 1/2 cup crushed peanuts (optional)

PEANUT DIPPING SAUCE:

  • 1/3 cup peanut butter
  • 1/4 cup Hoisin sauce
  • 3/4 tablespoon white vinegar

Instructions

PEANUT DIPPING SAUCE

In a bowl combine all sauce ingredients adding a little warm water if it’s too thick.

WRAPS

Layer a lettuce leaf over each wrap and then top with your fillings.  Try to pile everything in the bottom third of the wrap, leaving a gap at the edges to fold in.

Roll the wrap over the filling, fold in the sides and use a little avocado as glue at the end of the wrap to hold it closed.

Immediately wrap tightly in plastic wrap and place in fridge to hold together.

Cut in half after wrapping with plastic wrap.


Notes

You can use all these salad ingredients or just the ones your kids like.

They work best if you fill with a lot of filling.
