Vegetarian Wraps perfect for school lunchboxes. As they are dairy free and meatless, you don’t need to worry about trying to keep them cool in your kid’s lunchboxes.
Vegetarian Wraps
I think I pretty much spent my entire school years eating Vegemite sandwiches and an apple for lunch, yet I now spend every morning working out how many serves of veggies I can get into my kids at lunchbox. I guess maybe as Bento lunchboxes became common, we started looking for things to fill all those little compartments and sandwiches, muesli bars and apples became a thing of the past…. who knows? My kid’s still get Vegemite sandwiches and muesli bars some days, it’s too hard to keep up lunchbox motivation everyday! It’s probably easiest if your kids just eat the same thing everyday. I would be happy with this, I just haven’t found the magic lunchbox my kids will eat every time.
Sam wants his recess in the same lunchbox as his lunch, so I really can’t have anything that needs to stay cold in their as I don’t trust he will pack it all away again after recess. So I am sticking with meatless and cheeseless lunches, especially during Summer. These wraps were inspired by these Rainbow Roll-Ups, by PinchofYum who do more of an adult version.
They are perfect for school lunchboxes;
- They don’t need to be kept cool
- The lettuce leaf stops the bread from going soggy
- You can mix and match whatever salad you have in the fridge
- Leave out the peanuts and sauce for a nutfree option
- Add some mayo

Vegetarian Wraps
- Total Time: 25 minutes
- Yield: 6 full wraps 1x
Description
Ingredients
- 6 flatbreads
- 6 large lettuce leaves
- 1 cup cooked sushi rice
- 1 avocado, smashed
- 3 carrots, thinly sliced
- 1 cucumber, thinly sliced
- 1/4 head red cabbage, thinly sliced
- 1/2 cup parsley, roughly chopped
- 1/2 cup crushed peanuts (optional)
PEANUT DIPPING SAUCE:
- 1/3 cup peanut butter
- 1/4 cup Hoisin sauce
- 3/4 tablespoon white vinegar
Instructions
PEANUT DIPPING SAUCE
In a bowl combine all sauce ingredients adding a little warm water if it’s too thick.
WRAPS
Layer a lettuce leaf over each wrap and then top with your fillings. Try to pile everything in the bottom third of the wrap, leaving a gap at the edges to fold in.
Roll the wrap over the filling, fold in the sides and use a little avocado as glue at the end of the wrap to hold it closed.
Immediately wrap tightly in plastic wrap and place in fridge to hold together.
Cut in half after wrapping with plastic wrap.
Notes
You can use all these salad ingredients or just the ones your kids like.
They work best if you fill with a lot of filling.
