TOMATO RED PEPPER PASTA SAUCE

Ingredients

  • 2 red peppers, chopped into 1cm pieces 
  • 250g cherry tomatoes 
  • 1 onion, chopped 1cm pieces
  • 4 cloves of garlic
  • 200g feta
  • 3 tbsp olive oil
  • 1 tsp oregano
  • pasta of your choice

Instructions

Pre heat oven to 200 degrees.

In a baking dish place the feta in the centre and red peppers, tomatoes, onion and garlic around it.

Drizzle with olive oil and sprinkle oregano, salt and pepper.

Bake uncovered for 40 minutes until tomatoes are bursting and feta is golden on top. Give the veggies a stir a few times if they start to darken on top.

Cook pasta as per packet instructions.

Tip everything from baking dish into a blender and blitz until smooth.

Pour over and toss through pasta.

Notes

  • If you are looking for a creamier sauce you can add 1/4 cup of cream or milk.
  • You can freeze this pasta sauce to use at a later date.
  • Can be kept in the fridge in an air tight container for up to one week.
