TOMATO RED PEPPER PASTA SAUCE INGREDIENTS
- RED PEPPERS – Also known as capsicum. Red peppers work best but you can use yellow or orange instead.
- FETA – I also tried this with cream cheese and it works too, with a milder flavour.
- CHERRY TOMATOES – Cherry tomatoes are best to use as they are naturally sweet but you could use whole tomatoes if needed, just roughly chop.
- OLIVE OIL – Any high-quality extra virgin variety works best. This helps make the sauce rich and creamy.
- OREGANO – A great Mediterranean seasoning for extra flavour.
- GARLIC – Fresh garlic works best as it adds flavour when roasting. If you don’t have fresh garlic you can use jarred or powered.
- ONION – I used yellow onion but you could use any onion as an alternative.

HOW TO MAKE THIS CHERRY TOMATO PASTA SAUCE
STEP ONE
In a baking dish place the feta in the centre and capsicum, tomatoes, onion and garlic around it.
Drizzle with olive oil and sprinkle with oregano, salt and pepper.
STEP TWO
Bake uncovered for 40 minutes until tomatoes are bursting and feta is golden.
STEP THREE
Tip everything from the baking dish into a blender.
STEP FOUR
Blitz until smooth.
TOMATO RED PEPPER PASTA SAUCE
Ingredients
- 2 red peppers, chopped into 1cm pieces
- 250g cherry tomatoes
- 1 onion, chopped 1cm pieces
- 4 cloves of garlic
- 200g feta
- 3 tbsp olive oil
- 1 tsp oregano
- pasta of your choice
Instructions
Pre heat oven to 200 degrees.
In a baking dish place the feta in the centre and red peppers, tomatoes, onion and garlic around it.
Drizzle with olive oil and sprinkle oregano, salt and pepper.
Bake uncovered for 40 minutes until tomatoes are bursting and feta is golden on top. Give the veggies a stir a few times if they start to darken on top.
Cook pasta as per packet instructions.
Tip everything from baking dish into a blender and blitz until smooth.
Pour over and toss through pasta.

- If you are looking for a creamier sauce you can add 1/4 cup of cream or milk.
