‘That’s not my Monster’ Pancakes made with blueberry and plain pancake mix and squeezy bottles from Kmart!


Ingredients

Scale
  • 2 eggs
  • 2 cups plain flour
  • 2 cups milk
  • 1/2 cup blueberries (frozen or fresh)

Instructions

THERMOMIX METHOD

Place eggs, flour and milk into TM bowl and mix 10 sec / speed 5.  Scrape down sides and repeat.  Pour half the mixture into 1 of the sauce bottles and set the rest aside.  You don’t need to clean bowl, just add blueberries to TM bowl and blend 10 sec / speed 8.  Pour back in half the pancake mixture and blend again 20 sec / speed 6, pour this into another squeezy bottle.

Place the bottles into fridge for at least an hour or overnight if possible, to allow mixture to thicken.

Heat a flat crepe pan over low heat and draw the outline of your monster with the blueberry mixture.  Leave to cook slightly for 1-2 minutes then fill in centre with the plain pancake mix.  Once mixture starts to bubble and looks firm flip over and cook a further 1-2 minutes on other side.

NON THERMOMIX METHOD

In 2 bowls, place 1 cup of flour into each.  Make a well in the centre and add the egg, start whisking together and slowly add the milk, whisking continuously.  In a food processor, blitz the blueberries and mix into one of the bowls.

Pour each colour into each sauce bottle.

Place both bottles in the fridge for at least an hour or overnight if possible, to allow mixture to thicken.
