Crunchy Tahini and Honey Cookies perfect for school lunch boxes or after school snacks. My kids said these were the best cookies I have ever made!
Tahini & Honey Cookies
These cookies are made with tahini instead of peanut butter, making them a great snack to put in school lunchboxes. I actually used black tahini in these as I had been given a jar, but regular works just as well. Tahini is made by grinding sesame seeds into a smooth paste. Sesame seeds come in a variety of colours; white, yellow, black and red, they are rich in B vitamins, iron, magnesium, calcium and zinc. Tahini makes a really great peanut butter replacement, especially in baking.
These cookies are made all in one bowl, so easy and less washing up! You can leave plain or decorate the top with sesame seeds and pepitas if you like. I thought my kids would avoid the ones with pepitas but they still loved them.

Tahini & Honey Cookies

Ingredients
- 125g salted butter, softened
- ½ cup coconut sugar
- ¼ cup caster sugar
- 1 egg
- 1 cup rolled oats
- 1 cup plain flour
- 2 tablespoons baking powder
- 2 tablespoons tahini
- 1 tablespoon honey
- 1 tablespoon pepitas (optional)
- 2 teaspoons sesame seeds
Instructions
Pre heat oven to 190C / 170C fan-forced.
In a large bowl beat the butter and sugars with an electric mixer until pale and creamy. Add the egg and beat agin until combined. Add the oats, flour and baking powder and mix with a wooden spoon. Finally stir through the tahini and honey.
Roll tablespoons of mixture into balls, place onto baking tray and with a slightly wet hand, press down with your palm to flatten. Sprinkle with pepitas and sesame seeds and bake for 15 minutes. Carefully use a spatula to slide cookies off tray onto wire cooling rack while still warm and then allow to cool.
Notes
These will store well in an airtight container.
