Sweet Potato Rosti


Description

Gluten free and dairy free Sweet Potato Rosti made easily at home for breakfast, lunch or dinner! Just 4 healthy ingredients and a fun way to change up your carbs.


Ingredients

Scale
  • 500g gold sweet potato
  • 2 eggs
  • 3 tablespoons buckwheat flour
  • 4 tablespoons coconut oil

Instructions

Grate sweet potato and squeeze out any excess liquid.  Mix with the egg and flour.
 
Place one tablespoon of coconut oil into a large frypan over medium heat, place four large spoonfuls of mixture into the pan, flatten down with the back of the spoon and cook 3-4 minutes on each side until crispy and cooked through. 
 
Drain on paper towel before serving and enjoy with any side of your choice!
