- 500g gold sweet potato
- 2 eggs
- 3 tablespoons buckwheat flour
- 4 tablespoons coconut oil
Instructions
Grate sweet potato and squeeze out any excess liquid. Mix with the egg and flour.
Place one tablespoon of coconut oil into a large frypan over medium heat, place four large spoonfuls of mixture into the pan, flatten down with the back of the spoon and cook 3-4 minutes on each side until crispy and cooked through.
Drain on paper towel before serving and enjoy with any side of your choice!
