Simple Miso Soup

Ingredients

  • 2 cups / 500ml water
  • 1 sheet nori (dried seaweed), cut into squares
  • 1/2 cup chopped greens (chard or kale)
  • 4 spring onions, thinly sliced
  • 100g firm tofu, cut into squares
  • 2 tablespoons Shiro Miso paste (white miso)
  • 2 handfuls cooked soba noodles

Instructions

In a medium sized saucepan, simmer the nori in the water for 5 minutes.

In a small bowl whisk together the miso with a little hot water into a smooth paste.

Add the greens, onion and tofu to the saucepan and cook 5 minutes.

Remove from heat and stir through miso.

Place noodles into bowls and pour over soup.

Notes

All these ingredients are optional, for example if you don’t have tofu, just make with remaining ingredients.
