Simple Miso Soup
I hadn’t realise how easy and delicious homemade miso soup was and so much better than opening a packet of 2 minute noodles!
This is great as a whole meal, or a small bowl alongside a yummy rice based dinner. Any greens will work in this recipe, I just grabbed this spinach from the garden, kale also tastes amazing. I also added some leftover soba noodles I had in the fridge, you can easily leave these out. The nori I used is just the dried sheets of seaweed used to make sushi and cut into squares. This soup really is full of nourishing ingredients, perfect for a Winter’s dinner.
Miso is essentially a fermented soy bean paste, with a number of varieties available. I like to use the white paste miso, called Shiro, this is made with fermented soy beans and rice. It’s not fermented for long, so has a mild and sweet taste, this makes it the most versatile. I really like this gluten free brand Spiral Shiro Miso. Hatcho Miso is traditionally made of 100% soybeans (no grains, like rice and wheat, are added) and is a darker, reddish brown. It’s not as sweet as Shiro Miso and has a more intense, bold and flavour. Kome, Sendai or red miso are made from white rice and Genmai is made from brown rice. Mugi Miso is made using barley and soybeans.

Ingredients
- 2 cups / 500ml water
- 1 sheet nori (dried seaweed), cut into squares
- 1/2 cup chopped greens (chard or kale)
- 4 spring onions, thinly sliced
- 100g firm tofu, cut into squares
- 2 tablespoons Shiro Miso paste (white miso)
- 2 handfuls cooked soba noodles
Instructions
In a medium sized saucepan, simmer the nori in the water for 5 minutes.
In a small bowl whisk together the miso with a little hot water into a smooth paste.
Add the greens, onion and tofu to the saucepan and cook 5 minutes.
Remove from heat and stir through miso.
Place noodles into bowls and pour over soup.
Notes
All these ingredients are optional, for example if you don’t have tofu, just make with remaining ingredients.
