Sesame Chicken in a Sweet Thai Style Sauce
I wasn’t sure whether to call this recipe Cashew Chicken, Honey Sesame Chicken or Sesame Chicken Stir Fry, it isn’t really traditional for either Cashew Chicken or Sesame Chicken, but boy it tastes good! It’s really quick to make with simple ingredients and is easily a family friendly dinner everyone will love!
I guess this is pretty much a chicken stir fry dinner, I just usually think of a stir fry containing a lot more vegetables, which you could easily add to this one eg spring onions, snow peas, green capsicum, red onion. I made this sesame chicken stir fry without the chilli, served up the kids and then stirred through the chilli achar for mine. It tastes incredible both with and without the hit of spice.
We love having chicken stir fry for dinner in our house, here are a few of my favourites;
LEFTOVER CHICKEN TERIYAKI STIR FRY NOODLES
CHICKEN STIR FRY WITH BROCCOLI + CARROT NOODLES
OTTOLENGHI’S PORK STIR FRY
I prefer to soak my rice overnight to make it more digestible. Place in a bowl covered with filtered water and add a teaspoon of whey or lemon juice and leave at room temperature overnight. Strain well before cooking the next day. If you then cook the rice, leave it to cool overnight and reheat the next day you create resistant starch which is a great way to help improve gut health. Just make sure you reheat the rice completely before reserving, I recommend covered and in the oven as it heats more evenly than a microwave.
