Refined Sugar Free Macaroons made with just egg, coconut, honey and vanilla, ready in minutes and perfect for school lunchboxes (or lockdown homeschool snacks).  These easy and healthy macaroons are a great sweet, gluten free snack.

STEP 1
Whisk egg whites, then add honey & yolk.

STEP 2
Fold in coconut, flour & vanilla.

STEP 3
Refrigerate for 20 mins then roll into balls & flatten.

STEP 4
Place on lined tray & bake 10 mins 160C.

Refined Sugar Free Macaroons

This recipe was created by my good friend Jess at Wholesome Little Foodies. Made with just 5 simple ingredients and are gluten-free, dairy-free, refined sugar-free and nut-free. As Jess says they are “High in fibre, protein and healthy fats, these are a delicious remake of a classic coconut macaroon that nourishes little tummies and are a guilt-free treat for everyone!”

Easy + Healthy Macaroons

Description

Easy & Healthy Macaroons made with just egg, coconut, honey and vanilla, ready in minutes and perfect for school lunchboxes (or lockdown homeschool snacks).  These are a great sweet, gluten free and healthy snack.


Ingredients

Scale
  • 4 egg whites + 1 yolk
  • 2 tablespoons honey
  • 2 cups / 200g desiccated coconut
  • 2 tablespoons coconut flour
  • 1 teaspoon vanilla extract
  • Jam to serve (any flavour will work)

Instructions

Pre heat oven to 160C  (fan forced).

In a large bowl beat egg white until stiff, add in honey and egg yolk and beat until combined.

Fold in desiccated coconut, coconut flour and vanilla.

Refrigerate for 20 minutes or until mixture is solid enough to form into balls.  Roll tablespoons of mixture into balls and place onto a lined baking tray and flatten each slightly.

Bake for 10-15 minutes until edges start to golden.  Allow to cool on a wire rack, they will harden as they cool.

Serve with a dollop of jam in the centre of two biscuits.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze for 3 months.
