Gluten free and dairy free, Raw Lemon Macadamia Slice is the perfect sweet treat that is delicious and healthy. Made easily with no baking and in season lemons, this is one of my favourite raw treats to make.

RAW LEMON MACADAMIA SLICE
I love having healthy raw slices like this in the freezer for a sweet treat I don’t have to feel too guilty about. They are so easy to make, you don’t need any baking skills, just blitz and layer!
I love this time of year when everyone is giving you big bags of lemons from their backyard trees, planning on making some of my Honey, Lemon & Thyme Gummies this week too.
You can swap the maple syrup for honey or rice malt syrup if you prefer, just use equal amounts. You could even use lime instead of lemon and make this a Macadamia Lime Slice.
INGREDIENTS
- CASHEWS – raw cashews work the best as they create a creamy base for the slice.
- COCONUT – I used desiccated coconut, but you can use shredded or coconut flakes. I would blitz these in the food processor before hand to chop them up extra fine for the slice.
- DATES – the best type of dates to use are medjool dates. They have a sweet, caramel taste and chewy texture, perfect for raw slices.
- LEMON – lemon juice and lemon zest are both used in this recipe.
- MACADAMIAS – when blended creates a buttery and creamy flavour. Perfect for raw slices.
- MAPLE SYRUP – adds sweetness. You could use rice malt syrup as an alternative.
- COCONUT OIL – helps to hold the slice together and give it a coconut flavour.
- VANILLA EXTRACT – adds flavour to the slice.

Is this slice gluten free and dairy free?
Yes this recipe is both gluten and dairy free.
How long will a raw slice last?
If you store your raw slice in the fridge it will last you for a week in an air tight container. I often like to freeze half of the slice once I have cut into portions so then I can pull one out to thaw in the kids lunchbox by lunchtime.
Can I use almonds instead of cashews?
Yes, you can use almond in stead of cashews but I recommend cashews as they have a creamier flavour.
What are the best dates to use to make any raw slice?
Medjool dates are the best type of dates to use for any raw slice. As they are sticky they bind the mixture together really well. Using regular dates you will find that the mixture won’t hold together and will most likely fall apart which is why it’s important to use medjool dates.

Description

Ingredients
BASE
- 1 cup / 150g cashews
- 1 cup / 80g desiccated coconut
- 1 cup / 140g medjool dates, pitted
- 1 tablespoon lemon juice
- pinch of salt
TOP
- 2 cups / 280g macadamias
- ⅓ cup / 80ml maple syrup
- zest of 1 lemon
- ¼ cup / 60ml lemon juice
- 3 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
Instructions
THERMOMIX METHOD
BASE
Line a square cake tin with baking paper. Place all base ingredients into TM mixing bowl and blend 30 sec / speed 10. The mixture should stick together like a dough, if not, add a tablespoon of water and blend a further 10 sec / speed 8. Cover and place in fridge to set until quite firm.
TOP
Place all top ingredients in TM mixing bowl and blend 20 sec / speed 8, scrape down sides and repeat. Press down evenly over the base layer and place back in the fridge to set.
Once firm, cut into 16 squares and store and serve straight from the freezer.
NON THERMOMIX METHOD
BASE
Line a square cake tin with baking paper. Place all base ingredients into a food processor and blitz until well combined into a dough (this may take a few minutes). The mixture should stick together like a dough, if not, add a tablespoon of water and blend a further 10 sec / speed 8. Cover and place in fridge to set until quite firm.
TOP
Place all top ingredients into the food processor and blitz until smooth. Press down evenly over the base layer and place back in the fridge to set.
Once firm, cut into 16 squares and store and serve straight from the freezer.
Notes
The top layer will spread easily over the base if you wait until the base has set firm.
This slice is best stored in an air tight container in the freezer, it defrosts very quickly to be eaten and can go quite soft at room temperature.
