Mushroom Quesadillas with Feta makes a great, no fuss dinner when camping. Just simply two flatbread wraps stuffed with a delicious filling of mushroom, feta & mozzarella.
Mushroom Quesadillas with Feta
We are loving Quesadillas our house at the moment and we are about to head off on a 3 week road trip in our camper trailer, so there will be plenty of dinners like this. Minimal prep and minimal dishes = winning for me! I made these for my friend’s 30th birthday brunch, they were so good! If you have some fresh thyme in the garden add a little of that, goes so well with the mushrooms.
Try my Cheese Quesadillas, just like toasted cheese sandwiches made with tortillas, this is the most basic recipe, but you could really add anything you want to these…. Ham, avocado, roast chicken, cream cheese, spring onions, capsicum, coriander.
Perfect for weekend breakfast, lunch or a quick and easy vego dinner.

Description
Ingredients
- 3/4 cup mushrooms, sliced
- 1 tablespoon butter
- 2 tortillas
- 1/2 cup feta, crumbled
- 1/2 cup mozzarella cheese, grated
Instructions
Heat the butter in a large frypan over med-high heat. Cook the mushrooms until soft, then set aside.
Leave the frypan on the heat, place into it one tortilla, layer it with half the grated cheese, mushrooms, feta, top with remaining grated cheese and then finally the other tortilla.
Cook for 2-3 minutes on each side until lightly browned and the cheese has melted.
Remove from pan and cut into 4 triangles.
