Quesadillas! Crispy tortillas stuffed with melted cheese and all of your favourite fillings. This is my super simple Quesadilla guide, from a simple cheese to chicken & avocado and an option even using leftover tacos!
Quesadilla!
These are perfect for lunchboxes or that last minute, ‘I don’t have anything for dinner’, dinner. Kind of like upgrading from toasted cheese sandwiches for dinner. I prefer the taste of these as the tortillas are so light and don’t over power the flavour of the filling.
Once you know how to make a basic Cheese Quesadilla, you can start adding any of your favourite fillings. Just choose a good, melting cheese, I prefer mozzarella but sometimes I only have cheddar left in the fridge and that works fine. Below are some links to my favourites.
I have included notes on making the quesadillas using one tortilla at a time, this can work better when adding lots of filling, easier to flip and helps with spillage when eating. Basically you either layer the cheese and filling over one whole tortilla and top with another and cook, or add filling to one half of a tortilla, fold and then cook.
Cooking these in the butter is completely optional, but is a firm favourite in our house giving them an extra rich crispiness, a little ghee would also work well to cook them in.

Description

Ingredients
- 4 tortillas
- 1½ cups grated cheese (cheddar or mozzarella)
- 1 tablespoon butter
- Choice of filling
Instructions
Lay out two of the tortillas.
Divide half of the grated cheese between them and spread out evenly. Top with your filling of choice, remaining cheese and then the last two tortillas.
Heat half the butter in a large frypan over medium heat and add one of the quesadillas. Cook for 2 minutes on each side until lightly browned and the cheese has melted.
Remove from pan and cut into 8 triangles. Repeat with the remaining quesadilla.
Notes
You can also assemble one tortilla at a time, just place filling on half, then fold over and cook as per recipe above.
Some suggested fillings;
- Cheese – leave recipe as is, don’t add anything extra.
- Chicken + Avocado – add in 1 cup leftover roast chicken & 1 avocado, diced.
- Mushroom + Feta – add in 1½ cups sliced mushrooms & 1 cup feta.
- Leftover Tacos – add in 1 cup cooked taco mince, 1 tomato diced & ½ avocado diced.
