My tasty Pesto Bagel Lunchbox is one of the easiest recipes that can be made in no time. Perfect for those busy school mornings and super delicious, this will surely be a hit with your kids. I am loving this Sun Dried Tomato Pesto so much right now, it is going on everything! Pasta, rice, chicken and now in to school lunch boxes. I love the simple flavours of pesto, cheese and spinach, but you could add in chicken, fresh tomato or ham.
PESTO BAGEL LUNCHBOX
This Pesto Bagel Lunchbox is a great alternative to the standard sandwich. Bagels are a fun way to change things up and keep the kids interested in their school lunches. Not only is this recipe super easy to make it also tastes so delicious that your kids will be asking for more!

How can I make this lunchbox gluten free?
As rice crackers are gluten free, you will only need to change the bagel to a gluten free bagel. If you can’t find a gluten free bagel, you can always try a gluten free roll or bread.
How can I add more protein to this bagel?
Leftover roast chicken or chicken made in the air fryer.
Can I make this dairy free?
Of course! you can swap the mozzarella out for vegan mozzarella.

HOW TO MAKE PESTO BAGEL LUNCHBOX
Firstly I chopped the cucumber and carrots into slices to fit the lunchbox. Add an amount of rice crackers that will fit.
For the Pesto Bagel I sliced the bagel in half and added the red pesto to one side, followed by the mozzarella and spinach. I toasted mine but you could leave it fresh if your kids would prefer.
PESTO BAGEL LUNCHBOX
Ingredients
RED PESTO
- 1 clove of garlic
- 280g jar sun-dried tomatoes
- 80g toasted pinenuts
BAGEL
- 1 bagel
- slice of mozzarella
- spinach leaves
- homemade red pesto
Instructions
RED PESTO
Place all ingredients in a blender and blitz until combined.
PESTO BAGEL
Cut bagel in half and add the homemade red pesto to one side.
Add sliced mozzarella and spinach to bagel.
Optional to toast bagel in sandwich press or leave as fresh.
Cut in half to serve.
