Peanut Butter Cookies made with just 3 ingredients and gluten free!
Peanut Butter Cookies
These are the perfect cookies for when you feel like baking but don’t really feel like baking. No need for a big list of ingredients and flour everywhere, just a few items you probably always have on hand.
These cookies are quite soft, neither really chewy nor super crunchy, kind of inbetween with a delicious peanutty flavour. I used Rapadura sugar in these as it, along with honey and maple syrup, is y sweetener of choice. It is made from evaporated cane juice so is an unrefined sweetener and keeps more of it’s nutrients in comparison to white processed sugar. This recipe was originally posted in March 2016, I have since remade them and took some nicer pics. They are super simple and perfect for after school snacks. To get the pressed pattern on each cookie, I rolled each spoonful into a ball and then flattened with a fork.

Ingredients
- 1 cup smooth peanut butter
- 1 cup rapadura sugar
- 1 egg
Instructions
Pre heat oven to 190°C.
Combine all ingredients well using an electric mixer. Use a tablespoon to scoop into small balls and flatten slightly with a fork.
Bake until dark golden in colour, about 9 minutes.
