Oven Baked Cauliflower Fritters
I have been recipe testing these fritters for a while now and think I am really happy with this recipe. It seems foolproof (as long as you don’t forget and leave them in the oven to burn), the kids love them and they are perfect reheated for leftovers, even really delicious cold, straight from the fridge!
They are oven baked, so;
a) healthier than deep fried and
b) you don’t need to buy a gallon of oil to whip these up. (b was my main reason to go oven baked).
The blue cheese sauce is optional, but I have included it for my friend Lisa who came to mine for a Christmas lunch and has been asking for the recipe. Although, I do know a few kids that love blue cheese and would probably devour it. I served my fritters in a bowl over rocket and then again as a side for the kids dinner. I was expecting mine to not like them, but they thought they were a real treat, guess you can never pick it!
Anyway, give these a go when cauliflower is in season, they are also great when having people over, or for Christmas lunch. Then with your leftover cauliflower make my Cauliflower and Corn Mac and Cheese, perfect no waste cooking!

Description
Oven Baked Cauliflower Fritters in a really simple batter and blue cheese dipping sauce.
Ingredients
400g cauliflower, cut into florets
100g / 2/3 cup self raising flour
1 egg
125ml / 1/2 cup ice cold water
BLUE CHEESE SAUCE
100g blue cheese, crumbled
60ml / 1/4 cup milk
1 tablespoon white wine vinegar
1 tablespoon olive oil
Instructions
Cook cauliflower in boiling water for 5 minutes, drain and lay out on a tea towel to dry off.
Pre heat oven 220ºC.
Place flour into a bowl, make a well in the centre then whisk in the egg and ice cold water. Add cauliflower to bowl and toss to coat each piece.
Shake any excess batter off each piece, then place onto a baking tray lined with baking paper.
Bake on an upper rack for 15-20 minutes until lightly crisped and golden.
BLUE CHEESE SAUCE
Place all ingredients into a small food processor and blitz until smooth.
Notes
These re heat really well. I placed back into a hot oven, drizzled with a little olive oil and sea salt, for 5-10 minutes until warmed through.
