Make clean up a breeze with this family favourite of One Pot Lamb Cutlets & Potatoes with Spinach and Pesto. Packed full of flavour with minimal ingredients!
STEP 1
The day before steam your potatoes.
STEP 2
In a large frypan cook the lamb to your liking and set aside to rest.
STEP 3
In the same pan fry the potatoes until crispy.
STEP 4
Stir in the spinach leaves and pesto and serve.
One Pot Lamb Cutlets + Potatoes + Pesto
Lamb cutlets are pretty much a favourite in most Aussie households with kids. I reckon it is one of the first meats introduced to little ones as they can easily hold the small bone and suck the meat off, it was in our house anyway! Both my kids get super excited when lamb cutlets are on the menu.

Pre steaming the potatoes not only makes for super crispy edges, as they come out of the steamer drier than if you were to boil them. It also provides resistant starch, which can help feed the good bacteria in your gut. You can read a bit more about resistant starch in this post by Sarah Wilson who was using it as a test to treat constipation. Basically it involves cooking your carbs as you normally would, allowing them to cool down and then either eating cold or reheating out of the fridge. It also saves cooking time for this dish!

Ingredients
- 500g baby potatoes, halved, peel if you like
- 3 tablespoons olive oil
- 8 lamb cutlets
- salt & pepper
- baby spinach leaves to serve
- pesto to serve, find my recipe here
Instructions
The day before steam your potatoes for 15-20 minutes until just cooked through.
Rub the oil over the lamb cutlets and season with salt and pepper. Heat a large fry pan over medium and cook the lamb cutlets for 5 minutes on each side, or cooked to your liking. Set aside to rest. Add the potatoes to the pan and fry for 8-10 minutes, turning them over a few times.
Add the lamb back to the pan and toss in the spinach leaves and pesto and serve on the table like this!
