No Churn Vanilla Ice Cream
We are currently on our big road trip to Port Hedland where I had plans of posting a heap of camp friendly recipes and super easy dinners while on the road. What I under estimated was how much work is involved taking a 4 and 5 year old, plus a dog on a road trip in a camper trailer. Being in different camp sites all the time and with no home luxuries, it really doesn’t leave any down time for the kids to go entertain themselves, even going to the bathroom we all need to go together. Although I have discovered the luxury of ensuite sites! So you get to camp but with your own bathroom right next to you, perfect for late night toilet runs.
I have been making this ice cream before we left on our trip. Ice Cream is pretty much a staple in our house, but I much prefer the idea of making it ourselves (mainly to reduce any additives possibly added to store bought ice cream). This one is super easy and makes about the same amount as a small tub.

Description
A creamy and delicious homemade ice cream you can make without an ice cream maker!
Ingredients
- 1 400g tin sweetened condensed milk
- 600ml whipping cream
- 1 tablespoon vanilla extract
Instructions
Using electric beaters, whisk cream until soft peaks, slowly add condensed milk and vanilla and continue to whisk until well combined.
Pour into loaf tin or an old ice cream container, cover and freeze overnight until firm.
Serve once frozen.
Notes
This ice cream sets a little firmer than store bought ice cream, just remove from freezer a few minutes before you want to serve to allow to soften slightly.
