No Bake Passionfruit Slice
Friends gave me a bag of these super bright orange passionfruit from their tree. (I guess it’s really a vine) I have been testing out a few recipes with these, then this morning, just as I went to make the lime slice I had been planning, I switched. Ditched the limes and threw in 3 of these passionfruit……… amazing! Tasted way better then I was expecting, which is now an issue as I have a whole slice sitting here with no one else eating it.
My kid’s being the fussy eaters they are, couldn’t get past the pips of the passionfruit. They have never eaten passionfruit before. Maybe I can ‘pay it forward’ and share the generosity with my neighbours.
The kid’s have made friends with these neighbour’s daughter. They chat to her as she jumps on her trampoline. I was so happy as it brought back my memories of having kids living either side of us when I was growing up. One side even had a gate to get to each other’s yard and the other a perfectly shaped tree we could climb up and yell out to see if anyone was home.
Anyway, my situation has turned out to be a bit of a pain as one day I said they could go over for a play. My two are only 3 or 4 and she is 8, so I went with them, which would have been fine if maybe her Mum was home and up for an arvo vino, but she was still at work and her Dad was busy with some work. So basically I sat in my neighbours backyard watching my kids on their playdate, bored and awkward to say the least. So that won’t be happening as often as my kids think it will……
Anyway, this makes a great afternoon snack. (for those kids not afraid of passionfruit pips) Or also a great one to take to work for morning tea. Enjoy!

Description
No Bake Passionfruit Slice that is amazingly delicious! Made with fresh passionfruit, cashews, dates and maple syrup for a little sweetness.
Ingredients
BASE:
- 1 cup cashews ( I used raw)
- 1 cup desiccated coconut
- 1 cup Medjool dates, pitted
- 1 tbsp lime juice
- pinch salt
TOP:
- 1/2 cup cashews
- 3 passionfruit, pulped
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
GARNISH::
- 3 passionfruit, pulped
Instructions
THERMOMIX METHOD
Line a 20cm x 20cm cake tin with baking paper.
Place base ingredients into mixing bowl, blend 20 sec / speed 8, scrape down sides and blend a further 10 sec / speed 8. It should form a dough like consistency, if not, add a tablespoon of water and blend a further 15 sec / speed 8. Press mixture into base of cake tin. Cover and put in freezer to set.
Place top ingredients in mixing bowl and blend 1 min / speed 8, until smooth and creamy. Pour onto base layer then put back in freezer.
Once firm, cut into 16 squares and store and serve straight from the freezer.
Drizzle with extra passionfruit to serve.
NON THERMOMIX METHOD
Line a 20cm x 20cm cake tin with baking paper.
Place base ingredients into a food processor and blend until it comes together like a dough. (this can take 3 – 5 minutes in a small processor. If it still hasn’t come together, add a tablespoon of water and pulse again. Press mixture into base of cake tin. Cover and put in freezer to set.
Place top ingredients into food processor and blend til smooth and creamy. Pour onto base layer then put back in freezer.
Once firm, cut into 16 squares and store and serve straight from the freezer.
Drizzle with extra passionfruit to serve.
Notes
I find this slice is best served straight from the freezer as it can go soft.
