Mushroom Gnocchi with Pesto recipe. A great vegetarian family dinner option that is ready in minutes!
STEP 1
Cook gnocchi in boiling water & slice mushrooms.
STEP 2
Sauté gnocchi & mushrooms in butter.
STEP 3
Make my Hemp Seed Pesto or have some already in the fridge.
STEP 4
Serve mushrooms & gnocchi with a large spoonful of pesto.
Mushroom Gnocchi + Pesto
This is the only way my kids will eat gnocchi, they don’t really like the mushrooms, more because of their texture as I think they like the flavour they give the gnocchi in this dinner. I love the simplicity and minimal ingredients in this dinner, no need for a big grocery list or long prep. You could add in some finely diced garlic and onion just before adding the mushrooms, or even stir through some baby spinach at the end.

Mushroom Gnocchi with Pesto recipe. A great vegetarian family dinner option that is ready in minutes!
Ingredients
- 500g gnocchi
- 300g button mushrooms, sliced
- 3 tablespoons butter
- fresh parsley, to serve
- pesto, to serve (see my recipe here)
Instructions
Cook gnocchi in boiling water until it floats to the top, drain, rinse in cold water to prevent over cooking and set aside.
Heat butter in a large frypan over medium heat. Add mushrooms and saute for 8-10 minutes until golden brown. Add the gnocchi and cook a further 2-3 minutes until the gnocchi turns golden with little crispy bits.
Season with salt and pepper. Stir through a large spoonful of pesto and fresh parsley.
