First day back at school which means my first day back making school lunches. These Mini Chicken Rolls are super easy to make using Coles dinner rolls cooked in the air fryer for just 6 minutes and topped with a delicious filling.

MINI CHICKEN ROLLS

I like to create new ideas for recipes and this one somehow came together so nicely I surprised myself how delicious these mini chicken rolls turned out.

With leftover chicken that I needed to use, I decided to make a cherry tomato pasta sauce and instead of mixing the sauce with pasta, I mixed it with the leftover cooked chicken. I used the viral cherry tomato pasta sauce which I am sure you have all seen. If not you can find my recipe here. I simply added this to the mini rolls with some mayo and lettuce. Chef’s kiss!

MINI CHICKEN ROLLS LUNCHBOX INGREDIENTS

  • CRACKERS – any crackers will do, I used cheese crackers because they are my son’s favourite.
  • PEAR AND STRAWBERRIES – cut to size to fit into lunchbox.
  • CABANOSSI – cut into bite size pieces.

CHICKEN ROLLS

  • COLES DINNER ROLLS – you can find these here.
  • LEFTOVER COOKED CHICKEN – if you have leftover chicken to use, otherwise you can cook some chicken or buy a cooked chicken from your local supermarket.
  • CHERRY TOMATOES – I find cherry tomatoes best to use because they have a natural sweetness.
  • CAPSICUM – I used red capsicum which i think works best.
  • FETA – use the whole block of feta. I used danish feta and I think it gives a creamier taste.
  • GARLIC – to add flavour to pasta sauce.
  • OLIVE OIL – used to help create the sauce once cooked and mixed together
  • LETTUCE – I used cos lettuce, but you can use any lettuce you prefer.
  • MAYO – any mayonnaise you have will be fine.

FREQUENTLY ASKED QUESTIONS FOR MINI CHICKEN ROLLS

Can I add more vegetables to the pasta sauce?

Yes! of course. I have made the same pasta sauce but added mushrooms and zucchini and it taste just as good.

What if I don’t have an air fryer to bake the dinner rolls?

You can simply bake them in the oven. Follow the packet instructions for cooking times.

What if I don’t have leftover cooked chicken?

You can always buy some chicken breasts or thighs and cook or you could buy a cooked chicken from your local supermarket.

HOW TO MAKE MINI CHICKEN ROLLS

STEP 1

In a baking dish place the feta in the centre and capsicum, tomatoes, onion and garlic around it.

Drizzle with olive oil and sprinkle with oregano (optional), salt and pepper.

STEP 2

Bake uncovered for 40 minutes until tomatoes are bursting and feta is golden.

STEP 3

Tip everything from the baking dish into a blender.

STEP 4

Blitz until smooth.

Mix with the cooked chicken and add to the baked dinner rolls with mayo and lettuce.

Ingredients

CHICKEN MINI ROLLS

  • 2 red peppers, chopped into 1cm pieces 
  • 250g cherry tomatoes 
  • 4 cloves of garlic
  • 200g feta
  • 3 tbsp olive oil
  • 1 tsp oregano
  • dinner rolls
  • leftover cooked chicken
  • mayo, to serve
  • lettuce, to serve

LUNCHBOX

  • pear
  • strawberries
  • cheese crackers
  • cabanossi

Instructions

Pre heat oven to 200°C.

In a baking dish place the feta in the centre and red peppers, tomatoes and garlic around it.

Drizzle with olive oil and sprinkle oregano (optional), salt and pepper.

Bake uncovered for 40 minutes until tomatoes are bursting and feta is golden on top. Give the veggies a stir a few times if they start to darken on top.

Tip everything from baking dish into a blender and blitz until smooth.

Mix with the cooked chicken.

Bake the dinner rolls in the air fryer at 180°C for 6 minutes.

Cut the rolls in the centre but not all the way through.

Add the chicken with mayo and lettuce to serve.
