Easy Lemon Honey Yoghurt Cake Slice made easily in one bowl.  A rich, moist cake made with honey, lemon, olive oil and yoghurt, baked into a slice making for easy lunchbox portions.

Easy Lemon Honey Yoghurt Cake Slice

This cake is so easy, you just need a bowl and a whisk, oh and the ingredients.  I love the richness the olive oil and yoghurt give to the cake and it feels like a slightly healthier version of ‘cake’.  I wanted some lunchbox treats I could have in the freezer ready to go that weren’t store bought.  You could replace the vanilla yoghurt with plain or Greek to lower the sugar content in this.

One Bowl Lemon Honey Yoghurt Cake Slice

Description

A rich, moist cake made with honey, lemon, olive oil and yoghurt, baked into a slice making for easy lunchbox portions.


Ingredients

Scale
  • 2 eggs
  • 3/4 cup / 140g light extra virgin olive oil
  • 1 cup vanilla yoghurt
  • 2 tablespoons lemon juice
  • 1/2 / 180g cup honey
  • 1/2 cup / 110g raw caster sugar
  • 1 cup desiccated coconut
  • 13/4 cups / 225g plain flour
  • 3 teaspoons baking powder

Instructions

Preheat oven to 150°C.  Line a 27cm x 18cm slice tray with baking paper.

In a large bowl add the eggs, oil, yoghurt, lemon juice, sugar, honey and whisk together.  Add the coconut, flour, baking powder and continue to whisk until all combined.

Pour into slice tray and bake for 30-35 minutes, or until a skewer comes out clean.  Allow to cool in the tray for 10 minutes then on a wire rack.

Notes

Slice into serves and freeze in portions ready for school lunchboxes.
