Lemon cheesecake Balls
I went to a talk hosted by Tara Hawkens from The Wellness Tree, and she finished the night with a few of her bliss balls. The lemon ones were so moorish I thought I would give them a go. I have no idea what her recipe was, I don’t think she would have used cream cheese in hers, but I tried this combination and the kids and I loved them so thought I would share. Such a simple recipe to use up some of those Winter lemons and kid friendly for lunchboxes too. I love something simple that can replace store bought muesli bars or snacks.

Bliss balls are a fun way to add in some extra goodness to your kid’s lunchboxes. Try and get organic coconut to avoid the chemicals used in the drying process.

Description
4 ingredient no bake bliss balls made with cream cheese, coconut, lemon and honey.
Ingredients
- 2 cups / 200g desiccated coconut
- 250g cream cheese, roughly chopped
- 1 lemon, zested and juiced
- 1–2 tablespoons honey
- extra coconut for rolling
Instructions
THERMOMIX METHOD
Place all ingredients into TM bowl and blend 20 sec / speed 8. Scrape down sides and repeat until well combined. Use wet hands to roll into tablespoon sized balls. Sprinkle extra coconut on a plate and roll each ball in to coat, then place on a tray in the fridge to set.
NON THERMOMIX METHOD
Place all ingredients into a food processor and blitz until well combined. Use wet hands to roll into tablespoon sized balls. Sprinkle extra coconut on a plate and roll each ball in to coat, then place on a tray in the fridge to set.
Notes
You can store these in the freezer and allow to defrost in the lunchbox.
ORGANIC DESICCATED COCONUT
Organic coconut is made from organic coconut flesh which has been dehydrated and ground. It has no added preservatives, sugar, colours, anti-caking ingredients or flavours. Best stored in an airtight container below 25 degrees celcius, so refrigerate if needed.

Hi Bruno, these won’t go completely hard, they are a soft style bliss ball, but should still hold their shape.
