Leftover Shanks Shepherd’s Pie
So after everyone devours the amazing Lamb Shanks you just made, you can put aside the leftovers to make this the following night. I literally just poured the meat and veg in the base of my baking dish, topped with leftover mashed potato, drizzled in a little olive oil, then baked for 30 minutes at 200°C. You may need to double your measurements when making the lamb shanks so as to have enough for this recipe.
I used Jamie Oliver’s tip to get the nice crispy bits on top of the mash, you just need to smooth over then fluff lightly with a fork in different directions and drizzle in a little olive oil before baking in a hot oven. Food tastes so much better when it looks as good as this!

Ingredients
- leftover shanks and veg from previous night
- leftover mashed potato from previous night
- a drizzle of olive oil
Instructions
Pre heat oven to 200°C.
Layer the shanks and vegetables in the base of a casserole dish.
Spread over the mashed potato, smooth then fluff lightly with a fork in different directions.
Drizzle with a little olive oil.
Cook for 30 mins until golden and crispy on top.
