Leftover Sausage Pasta with Tomato Relish
I don’t think there are many families with young kids who don’t have sausages regularly in their dinner rotation and without a doubt there are always a few leftover. Rather than packing cold sausages into everyone’s lunchboxes, save them and whip up this really delicious little pasta dish that you can have on the table in 20 minutes!
I kept the ingredients really simple as the tomato relish from Crunch Preserves is so full of flavour I didn’t need to spend time cutting up and cooking aromatics like garlic and onion.

This pasta dinner has quite a sweet flavour to it, with the red capsicum, cherry tomatoes and relish all being quite sweet. You could add in some diced red onion, baby spinach or fresh chilli if you wanted.

Description
Leftover Sausage Pasta with Tomato Relish. The perfect leftover sausage recipe with simple ingredients, all made in one pot and ready in less than 20 minutes!
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 red capsicum, diced
- 1 punnet cherry tomatoes, cut in half
- 2–4 leftover cooked sausages, sliced
- 3 cups chicken broth or stock
- 300g uncooked pasta, any small shaped pasta works
- 1 cup grated cheese, tasty or mozzarella
- 1 jar Crunch Preserves Tomato Relish
- Fresh parsley to garnish
Instructions
In a large, high sided frypan, heat the oil over medium heat. Add the capsicum, cook for 2 minutes stirring, then add the tomatoes and sausage. Pour in the broth and mix through the pasta really well. Put on lid and cook 8-10 minutes, until pasta is cooked. Keep stirring while it cooks to prevent from sticking to the bottom.
Once cooked, remove from heat, stir through tomato relish, top with grated cheese and fresh parsley.
Notes
- If you don’t have a lid, just place a baking tray over the frypan to cover it.
- Check the cook time of the pasta you are using, there is a brand I use that needs 15 minutes cooking time, you will need to adjust your cooking time accordingly.
- If the sausages were cooked the day before, then this is best eaten straight away or frozen in portions.

WHERE TO BUY TOMATO RELISH?
You could certainly make your own tomato relish, but that would take this recipe from super simple, great midweek option to a whole lot of cooking and jar sterilising. (something I find more time consuming than it probably should be).
