Kinda Healthy Choc Chip Cookies
These cookies are crunchy and filling with added oats. They do contain a little sugar and the choc chips are optional if you like. I think they are a great treat for your kid’s lunchboxes or an after school snack on their way to sports. Just store in the freezer as a ready to grab snack!
These cookies came about after chatting on the phone to my friend, she was telling me the dramas of trying to bake her lunchbox muffins with a broken oven. She forgot until right as she was about to put the muffins in. So ended up walking her muffin mixture in her Thermomix with two kids in toe, a few houses down to borrow a neighbour’s oven. Whilst listening to this very dedicated story I thought to myself I should really be baking some lunchbox treats myself.
My kids are not really into muffins or baked goods so I thought I would try cookies instead. After a few trials, these crunchy, chocolate topped cookies were the winner! My kids however, just ate the chocolate off the top, as it turns out they aren’t into cookies either. But I think they taste great and will be a great addition to most kids lunchboxes. Ingredients
- 1/2 cup coconut oil
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup plain flour
- 1/2 tsp baking powder
- 1 cup oats
- 1/2 cup choc chips (white, milk or dark)
Instructions
THERMOMIX METHOD
Pre heat oven to 160°C (fan forced)
Place coconut oil, sugar and vanilla into TM mixing bowl and whisk 20 sec / speed 6. ( you may need to melt the coconut oil slightly first)
Add the egg and whisk 20 sec / speed 3.
Sift in the flour and baking powder, combine 5 sec / speed 4, scrape down sides and repeat.
Add oats and half the choc chips and mix REVERSE / 10 sec / speed 3.
Spoon teaspoon sized balls of dough onto a lined baking tray, about 5cm apart, flatten slightly and top with remaining choc chips.
Bake 15 minutes until lightly golden. Allow to cool on tray for a few minutes before transferring to a wire rack.
NON THERMOMIX METHOD
Pre heat oven to 160°C (fan forced)

Add the egg and whisk until well combined.
Sift in the flour and baking powder, add the oats and half the choc chips and stir until just combined.
Spoon teaspoon sized balls of dough onto a lined baking tray, about 5cm apart, flatten slightly and top with remaining choc chips.

Store in an airtight container in the fridge or pantry for up to 5 days, or keep in freezer for a ready to grab snack.
