Homemade Vanilla Slice Tarts are a childproof, less messy, reinvention of the classic Vanilla Custard Slice. These ones are made using puff pastry set in muffin trays so the pastry goes up the sides holding the custard filling in.
STEP 1
Roll pastry into a tube.
STEP 2
Cut into 6 even sized pieces.
STEP 3
Stand tube on it’s end and squash with your hand.
STEP 4
Roll each of these out thin.
STEP 5
Press down into holes of muffin tray.
STEP 6
Bake for 8 minutes, then press down centres with a spoon.
STEP 7
Mix together custard, and add to tarts and bake 15-20 mins.
STEP 8
Whisk icing ingredients and top while tarts are still warm.
Homemade Vanilla Slice Tarts
My kids have only recently discovered Vanilla Slice and geez it’s messy! Way too big for little fingers and mouths to get around, so usually involves me holding said slice and trying to angle into each kids mouth, attempting to make as little mess as possible. This is not very successful and I end up the stickiest.

Homemade Vanilla Slice Tarts are a childproof, less messy, reinvention of the classic Vanilla Custard slice. These ones are made using puff pastry set in muffin trays so the pastry goes up the sides holding the custard filling in.
Ingredients
PASTRY
- 2 sheets store bought puff pastry
CUSTARD
- 125g cream
- 1 egg
- 1 teaspoon vanilla
- 2½ tablespoons sugar
ICING
- 100g sugar
- 1 tablespoon milk
- 1 teaspoon vanilla
- 1 teaspoon cornflour
Instructions
Pre heat oven to 200°C.
Roll the puff pastry sheets into a tube, then cut into 6 even sized pieces. Stand each mini tube on it’s end, then use your palm to squash it flat. Roll out quite thin, then press into each hole in a muffin tray, make sure you go right up the sides or the custard will spill out. (you don’t need to grease or line the tray)
Whisk together all the custard ingredients in a bowl or jug. (a jug makes it easier to pour into pastries)
Bake in the oven for 8 minutes. Take out and use a teaspoon to press down in the centre of each. Fill each with custard, turn the oven down to 180°C and bake for 15-20 minutes. They are ready when the custard stops jiggling.
While the tarts are still warm, whisk together the icing ingredients and dollop a spoonful onto each tart.
